Simple step-by-step recipe for making a delicious chicken pot pie.
Ingredients:For the Filling:2 cups cooked chicken, shredded or diced
1 cup frozen mixed vegetables (peas, carrots, corn, and green beans)
1/3 cup butter
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 3/4 cups chicken broth
2/3 cup milk
For the Crust: 12. 1 package refrigerated pie crusts (2 crusts)
Instructions:
1. Preheat the Oven: Preheat your oven to 425°F (220°C).
2. Prepare the Chicken: Cook and shred or dice the chicken if you haven't already. You can use leftover roasted chicken, boiled chicken breasts, or a rotisserie chicken.
3. Cook the Vegetables:In a small saucepan, cook the frozen mixed vegetables according to the package instructions. Drain and set aside.
4. Make the Filling:In a large skillet, melt the butter over medium heat. Stir in the flour, salt, pepper, celery seed, onion powder, and garlic powder until well combined.
Gradually whisk in the chicken broth and milk, cooking and stirring until the mixture thickens and becomes smooth.
Add the cooked chicken and mixed vegetables to the skillet, stirring until everything is well coated with the creamy sauce. Remove from heat.
5. Prepare the Pie Crust:Roll out one pie crust and place it in the bottom of a 9-inch pie dish. Make sure it covers the bottom and sides of the dish.
Pour the chicken and vegetable filling into the pie crust.
6. Add the Top Crust:Roll out the second pie crust and place it over the filling. Press the edges of the top and bottom crusts together to seal. Trim any excess crust and make small slits in the top crust to allow steam to escape.
7. Bake: Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown.
8. Cool and Serve: Allow the chicken pot pie to cool for a few minutes before slicing and serving.
Enjoy your homemade chicken pot pie.
