Ingredients:
1 cup mixed vegetables (carrots, bell peppers, cabbage, and peas), finely chopped
1 medium-sized onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger, grated

1 tablespoon of tomato ketchup
2 tablespoons fresh coriander, chopped
1 cup paneer (cottage cheese), crumbled (optional)
4 large tortillas or flatbreads
Instructions:
1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add minced garlic and grated ginger to the pan. Sauté for a minute until the raw smell disappears.

7. If using paneer, add it to the vegetable mixture and cook for another 2 minutes.
8. Sprinkle fresh coriander over the mixture and give it a final stir. Remove the pan from the heat.
9. Warm the tortillas or flatbreads according to package instructions.
10. Spoon the vegetable mixture onto the center of each tortilla and roll them tightly, securing the ends.
