2 cups cooked and cooled jasmine rice (preferably a day old)



3 eggs, beaten

1 cup mixed vegetables (peas, carrots, corn, and diced bell peppers)

3 green onions, thinly sliced

3 tablespoons of soy sauce

1 tablespoon of oyster sauce

1 teaspoon sesame oil

2 tablespoons of vegetable oil

Salt and pepper to taste

1. Prepare the ingredients:

Make sure the cooked rice is cooled and not clumped together. If it's freshly cooked, spread it out on a tray to cool. In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat.

Chop the vegetables and green onions.

2. Heat the wok or pan:

Place a wok or a large skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl it around to coat the bottom. Add the chopped vegetables and green onions. Once the oil is hot, add the chopped vegetables and green onions to the wok or pan. Stir-fry them for a few minutes until they are slightly tender but still crisp.

3. Scramble the eggs:

Pour the beaten eggs into the wok. Allow them to set for a few seconds, then gently scramble them with a spatula until they are just cooked. Remove the scrambled eggs from the wok and set them aside. In the same skillet, add another tablespoon of vegetable oil and heat it up. Return the scrambled eggs to the skillet and mix them with the cooked vegetables for a final stir-fry before serving.

4. Cook vegetables:

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.

5. Combine rice:

Add the cooled rice to the wok. Use a spatula to break up any clumps and evenly mix the rice with the vegetables.

6. Season with sauces:

Pour soy sauce and oyster sauce over the rice. Stir well to ensure even distribution of the sauces.

7. Add scrambled eggs.

Gently fold the scrambled eggs back into the rice mixture, distributing them evenly.

8. Season with sesame oil:

Drizzle sesame oil over the rice and stir to combine. This adds a wonderful aromatic flavor to the dish.

9. Toss in green onions:

Add the sliced green onions to the wok and toss them in with the rice. Reserve some for garnish, if desired.

10. Adjust seasoning:
