1 kg of chicken, cut into pieces.
2 large onions finely chopped.
2 tomatoes, chopped.
3-4 cloves of garlic, minced.
1-inch piece of ginger, grated
2-3 green chilies chopped (adjust according to your spice preference).
1/2 cup plain yogurt
2 tablespoons vegetable oil or ghee
1 teaspoon of cumin seeds
1 teaspoon of coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
Salt to taste
Fresh cilantro, chopped for garnish.

Marinate the chicken.
In a large bowl, mix the chicken pieces with yogurt, ginger, garlic, turmeric powder, red chili powder, and salt.
Let it marinate for at least 30 minutes, or you can refrigerate it for a few hours for a more intense flavor.
Prepare the masala paste:
In a blender, combine the chopped onions, tomatoes, and green chilies. Blend until you get a smooth paste.
Cooking:
Heat oil or ghee in a large, heavy-bottomed pot over medium heat.
Add cumin seeds and let them splutter.
Add the masala paste and cook it until the oil starts to separate from the masala. This may take around 10–15 minutes.
Cook the chicken:
Add the marinated chicken to the pot and cook for 5-7 minutes, stirring occasionally, until the chicken is browned.
Spices:
Add coriander powder and garam masala and adjust the salt according to your taste. Stir well.

Reduce the heat to low, cover the pot, and let the chicken simmer in its juices for about 20–25 minutes, or until it's fully cooked. Stir occasionally.
Check for doneness:
Make sure the chicken is cooked through and the curry has a thick consistency. If needed, cook for a bit longer with the lid off to thicken the curry.
Garnish:
Garnish with fresh cilantro before serving.
Serve:
Chicken curry goes well with rice, naan, or bread.
